Emmett Haley is co-founder and president of Pearl, with Austin Burgess. The brief was narrow: curate the experiences that earn their tier, and change how hospitality is found. He sets the question a note has to answer before it is signed — a hotel against the room next door, a more expensive counter against a less expensive one across town, or five days in Kyoto against the same trip through Tokyo.
His Pearl passport runs to 520 places across 24 countries, 26 US states and 96 cities: 375 restaurants, 34 hotels (43 Michelin Keys), 59 bars and 73 Michelin stars. A note on an Aoyama counter, a Marylebone cocktail room or a new Aman is a call from inside the room. On wine he collects Burgundy and Bordeaux at cellar level, with tastings at 52 wineries logged on Pearl, across Napa, Sonoma, Willamette, Santa Barbara, Tuscany and Australia.
The editing runs past the table and the room: design-led hotels, culinary travel, hospitality programs, multi-country itineraries, and the wine regions a trip routes through. Price, the peer next door, and whether the experience earns its tier stay the same questions in each.
