Le Domaine des Prés Verts & Spa started out with a single room, a treehouse-style suite overlooking the hills of Burgundy. In a little over a decade, this unusual luxury hotel has expanded to include an eclectic collection of lodgings across four locations in wine country. The owner is a youthful hotelier who studied at the Ecole Hôtelière de Paris before purchasing a large plot of land in Pochey to develop his passion project, going on to personally design all of the hotel’s indoor and outdoor spaces with a focus on relaxation and harmony with nature. Pochey is still home to the original treehouse, which now features a terrace with a covered Jacuzzi that’s heated year-round — an amenity included in all of Le Domaine des Prés Verts & Spa’s rooms, alongside minibars stocked with organic treats and bath products made with pinot noir extracts — and as a handful of other suites, the spacious Le Studio with its own garden and wine cellar, and the hotel’s Le Cube spa. Across the board, the look is modern and rustic-chic with lots of exposed brick, natural stone, and local wood. In nearby Allerey is Le Refuge, a freestanding caravan-inspired suite surrounded by a quiet rural landscape. A few more luxurious suites are across the road in the medieval village of Châteauneuf, which is also where the hotel’s bistro and boutique are located; the northernmost site, Mont-Saint-Jean, is home to another sophisticated treehouse suite. And though there’s no single central gathering place in a hotel as spread out as this, it’s a fair trade for the uncommon degree of privacy.
