Oak Aging Through the Perspective of Champagne Drappier is an educational tasting seminar and masterclass focused on how Drappier uses wood in Champagne. Hugo Drappier, an oenologist and the 8th generation of the Drappier family, presents the program through a tasting of four Drappier wines.

The four wines in the tasting

Coteaux Champenois Perpétuité is described as a blanc de noirs perpetual reserve aged in a large oak foudre, with twenty vintages contributing to the blend. Trop M’En Faut is an organic, single-plot cuvée made from the Fromonteau grape variety and aged in demi-muid barrels made from oak from the Forêt d’Orient.

Grande Sendrée 2015 is Drappier’s single-plot vintage cuvée, produced every two to three years, and it is entirely vinified and aged in oak before ten years on the lees. Éclose comes from the Sendré plot and is aged in an oak egg for three years, then matured on the lees for a decade.
