Sergio Herman made his name at Oud Sluis, which held three Michelin stars before he closed it by choice. Frites Atelier is the other end of his range: a counter-service frites shop on Korte Gasthuisstraat in central Antwerp. The concept is simple in form but deliberate in execution. Herman applies the same sourcing instincts he brought to fine dining to the potato, the fat, and the sauce. What you get is a fast-casual format with the product quality of somewhere that costs four times as much.
