The University of Edinburgh Hospitality Collection, perhaps uniquely among university-affiliated concerns, owns a diverse and remarkably high-quality set of lodgings, and among them is The Scott, an 18th-century mansion now entering a second life as a stylish and understated luxury boutique hotel. The house and its public spaces have been carefully restored, and in the latter case, alterations have been made with a light touch, preserving an antique atmosphere that couldn’t be built from scratch today. Meanwhile the rooms are more contemporary in their aspect, with a sedate palette of deep secondary colors and a look that studiously avoids tartan but feels thoroughly Scottish all the same. Some are cozy and efficient, while others find space for couches or desks, and the marble bathrooms add an extra measure of luxury. Bonnar’s at the Scott, the restaurant, combines 18th-century atmosphere with modern Scottish cuisine, and it’s joined by the swanky Gallery Bar.
