Understory

In Edinburgh, Understory’s identity centres on its name, setting and drinks menu. Understory takes its name from the hidden layer beneath the forest canopy and is carved into historic vaults, with a lab where ingredients are created for the menu.

Historic vaults, ingredient work, and a named drinks list

the bar takes its name from the layer beneath a forest canopy. That idea carries into the venue’s identity: it is carved into historic vaults, with a lab used to create ingredients for the menu. The clearest stated draw is the drinks concept itself.

The listed cocktails lean into clear flavour cues. Marmalade sandwich is a daiquiri meeting a butter croissant and Paddington Bear, with juicy orange, buttery richness and marmalade, alongside angostura 5yr, diplomatico, nixta corn liqueur, fair kumquat and croissant syrup. Tispy filou is a lychee martini, with black cow vodka, wild strawberry, lychee “vermouth”, coconut and Petit Filous. The Negroni listing points to a bitter, moreish and strong profile, while the Painkiller is tropical and fresh with angostura 7yr, coco loco, fresh pineapple, acid and orange.

Choose it for the drinks concept and vault setting

Choose the bar for a cocktail list with nostalgic and tropical references, plus a setting described as historic vaults. Named serves such as Marmalade sandwich, Tispy filou, Negroni and Painkiller carry the clearest appeal.
