Here we have a hotel that is thoroughly contemporary, full of modern Western design furniture and boutique-chic graphic interior design, but that never lets you forget that this is the city of geisha and samurai. Five, the grill and lounge, is open all day, serving a tapas-inspired menu of distinctively local flavors; the 14th-floor Roof Terrace Bar offers expansive views of Kanazawa from its picture windows and open-air terrace.
