It’s hard to picture a historic landmark better suited to hospitality use than the 16th-century Universidad de Santa Catalina de Alejandría in the medieval city of Soria, Spain. A place of learning for nearly 300 years, this stately building is now home to Castilla Termal Burgo de Osma, the classrooms and offices transformed into luxurious rooms with original exposed stone walls and wood beams. The parquet floors, bold wallpaper, and modern bathrooms with walk-in showers are all new, and cloister-like suites feature details like fireplaces and soaking tubs. The hotel’s true highlights, however, are its stylish common spaces. The university was built around a large central courtyard framed by two levels of elegant archways; it’s now topped by a striking glass ceiling, bathing the bar and restaurant below in natural light. Down a staircase, the dramatically lit subterranean spa, with its Romanesque frescoes and thermal pools fed by a nearby spring, is a quiet and ethereal refuge.
