Set on the Côte Vermeille just a few miles from the Spanish border, Collioure is French, but displays quite a bit of Catalan influence. And though it’s a paradise on the Mediterranean, it’s far less heavily traveled by overseas visitors than the Côte d’Azur. Only here, perhaps, could a place like Maison Nova remain a well-kept secret — this 13-room escape is stylish, luxurious, sustainable, and as private as can be. Each of Maison Nova’s rooms is decorated with original works by Catalan artists, the impact of which is heightened by the interiors’ spare, modernist visual style. A few come with a private Jacuzzi or an outdoor bathtub, and all guests benefit from the hotel’s Phytomer spa, as well as its sauna, hammam, and dazzling outdoor pool. Breakfast is served daily, and light fare is available later; for a proper restaurant, you’re no more than half a kilometer from the center of Collioure.
