Overlooking the Baie de Collioure, in between Perpignan and the Spanish border, a spectacular little hotel hides in plain sight; Les Roches Brunes clings to the rocky hillside, enveloped in gardens and greenery. Its 15 rooms and three suites have been thoroughly re-imagined by its current owners, decked out in calming neutral colors and a style that’s both minimalist and warm. Terraces tumble down to the brown rocks at the water’s edge that gave the hotel its name; the hotel’s restaurant, meanwhile, is an attraction in its own right, serving Italian-accented fare accompanied by natural wines.
