About Sodade
Sodade takes its name from a Portuguese word meaning longing or nostalgia, fitting given chef Serge Vieira's family roots. His two-Michelin-starred restaurant anchors this small hotel in Chaudes-Aigues, a thermal village in the Cantal mountains known more for hot springs than haute cuisine. The hotel's rooms, redesigned in 2018, deploy wooden furniture and natural materials: straightforward but comfortable, with air conditioning and soundproofing that matter in an old building. Vieira has held two stars here since, cooking with precision honed under mentors like Régis Marcon and Marc Meneau. Serious food in an unlikely location.
