Chef Mathias Dandine made his name at La Magdeleine, a restaurant-hotel set in an 18th-century bastide in Gémenos. It was only a matter of time before he fell in love with another historic Provençal property — this time, a country manor in the village of Cabriès, just outside Aix-en-Provence. After an architectural overhaul, the place was reborn as La Bastide Bourrelly, a boutique hotel with luxury lodgings, beautifully landscaped grounds with centuries-old sycamore trees, and of course, its own one-MICHELIN-Star restaurant. Rooms and suites are modern and elegant, with bright white interiors, fine wood details, botanical patterns, retro-inspired decor, and spacious marble bathrooms with walk-in showers. Some have private patios overlooking the gardens, and suites come with large, light-filled living rooms. A gourmet breakfast featuring local cheeses, freshly baked pastries, and organic fruit juices is served each morning in the restaurant’s dining room or on its sunny terrace, and a pretty outdoor pool is open to guests in warmer weather. Since the old bastide is located right in the center of town, various attractions are easily reachable on foot, including a historic château, a bookshop, and hiking trails.
