    It would be easy to mistake Castilla Termal Brihuega, housed as it is in a circular-shaped structure in the Spanish countryside outside Madrid, for a bullring. But this eye-catching 18th-century landmark was once a textile factory, and its unusual layout, with two concentric rings built around a central courtyard, lends itself surprisingly well to its latest iteration as a wellness-focused luxury hotel. Beautifully restored stonework and original wooden beams are on prominent display in high-ceilinged rooms, and upper-level attic rooms and treehouse-like suites look out over lush, Versailles-inspired gardens. But the true showstoppers here are the common spaces, especially the airy all-day eatery La Redonda, which features a round dining room topped with a magnificent glass dome and illuminated by glowing lanterns at night. Coming in a close second is the stone-walled spa with its low-lit thermal baths, and, in season, the outdoor infinity pool facing views over the surrounding landscapes.
