The estate behind the dinner
David Hirsch bought a remote sheep ranch on the Sonoma Coast in 1978 and planted vines two years later. For the next two decades he focused on farming the soils and sold grapes to producers including Littorai, Kistler and Williams Selyem, which made Hirsch-designated wines.
Hirsch began making its own wines in 2002 from 60 plots across 72 acres. After years working with Ted Lemon of Littorai, the estate was farmed biodynamically. Jasmine Hirsch returned to the estate in 2008, became general manager in 2015, and has been its winemaker for the last seven years.
