Clever Koi is worth booking if you're after something with more personality than the standard Gilbert dining strip; it sits in a category of its own for creative, cocktail-forward dining in the East Valley. If you've been once and liked it, the evening version is where it earns its keep: the atmosphere shifts as the night progresses, making it a stronger call for a late dinner than an early one.

The Experience

Clever Koi operates out of a small suite at 60 W Vaughn Ave in Gilbert's Heritage District, which puts it within walking distance of several bars and makes it a workable anchor for a longer evening out. The venue leans into a moody, intimate atmosphere; this is not a loud, high-turnover room. Energy builds gradually through the evening, by later sittings the noise level settles into the kind of low hum that makes conversation easy without feeling hushed.

For returning guests, the cocktail program is the thing to dig into. Clever Koi has a reputation in Gilbert for drinks that are more considered than what you'll find at most neighbourhood spots, the kind of bar where you order two rounds and stay longer than planned. If cocktails are your priority, arrive after 8 PM when the room fills and the pace picks up. If you're coming primarily for food, earlier in the evening gives you more space and attention.
