The Grand National Hotel by Saint Peter takes over a handsome Victorian pub in Paddington, where chef Josh Niland has built a seafood-focused destination that combines a buzzing 40-seat restaurant, a walk-in bar, and 14 guest rooms upstairs. Niland's scale-to-tail approach has made the restaurant a serious dining proposition, and the bar attracts neighborhood regulars most evenings. Rooms stay understated: grey and brown tones, velvet headboards, hand-painted wallpaper, claw-foot tubs, and original marble fireplaces. Breakfast, exclusive to guests, involves marron on scrambled eggs and tableside theatrics. The fish-fat soap in the bathroom is the only real giveaway.
