About Château de Saulon
Built in 1460 for a lawyer to the French king, Château de Saulon has passed through the hands of Burgundian aristocracy, survived the Revolution, and changed hands many times before Thierry Goux bought it in 2018 and brought in design firm Rinck for a thorough restoration. The 42 rooms are spread across the château and its outbuildings, with exposed stone walls, pale oak bed frames, and patterned rugs that feel more country house than hotel. Each room looks out over something worth lingering on: the swimming pool, the park, two rivers, or the formal kitchen gardens. Just outside Dijon, the restaurant makes good use of what Burgundy's larder has to offer.
