From the location to the design to the award-winning restaurant, there’s nothing ordinary about Retiro Costiña. It’s set deep in the Galician countryside, and comprises seven pill-shaped villas scattered around a central lodge that serves as this small resort’s gathering space. Stark white and oblong, the villas remind ever so slightly of spaceships, while their minimalist interiors radiate serenity. This isn’t the sort of resort that comes with cascading pools or tennis courts; instead, nature serves as the inspiration for activity and renewal. It’s all anchored by chef Manuel Garcia’s restaurant, which is a destination unto itself; guests migrate from the kitchen and the wine cellar to the dining room and lounge throughout the course of a meal.
