The Brière region is known for its chaumières, whitewashed cottages with thatched roofs made of locally sourced reed. One of the area’s best boutique hotels, La Mare aux Oiseaux, offers a twist on tradition that’s both fanciful and practical: it’s set on an island, and rooms are housed in stilted cabins, just slightly elevated above the marshes of one of the largest wetlands in France. Bird-watching opportunities are abundant from each one-of-a-kind bungalow, all of which incorporate design elements from Africa and Asia. Some have four-poster beds draped with linen, others feature private wooden decks or Balinese-style bathtubs. Wooden footbridges lead past bamboo groves and to the main building, home to a handful of garden suites and Chef Éric Guérin’s colorful restaurant.
