In the historic heart of Quimper, along the banks of the Odet river, an old priory has been renovated and transformed into a cool and contemporary boutique hotel. Proprietors Catherine and Hervé Laurent have created a stylish escape, whose 11 rooms and 9 suites adapt historic architecture to modern purposes; the look is understated and tasteful in its sophistication. The spa is a dramatically lit space that retains the historic charm of the priory’s rough-hewn stone walls; a sunny dining room and outdoor terrace are the venues for breakfast, and after that you’re directed to the capable restaurateurs of Quimper’s Locmaria district.
