You couldn’t imagine a more classic Puglian farmhouse hotel than Masseria Le Carrube, whose whitewashed stone structure stands at the end of a country road less than half an hour’s drive from Ostuni, surrounded by the scrubland that is typical of this corner of Italy. Once a working olive-oil mill, it’s now a boutique hotel, its 19 rooms and suites modernized, but subtly — though the comforts are contemporary, the historical atmosphere remains. Of particular note is Le Carrube, the restaurant, an all-vegetarian affair where chef Massimo Santoro showcases the finest local and organic Puglian produce.
