On the eastern edge of Texel, an 18th-century farmhouse sits a short walk from the Wadden Sea. Op Oost's twelve adults-only rooms divide between garden suites with French doors, first-floor farm suites, and Wier Lodges in a restored seaweed shed. The shed dates to when this corner of the island drove the local seaweed and oyster trade. Pitched skylights, raw wood vanities with stone basins, copper fittings, and CoCoMat beds under Texel wool duvets set the tone throughout. The restaurant serves a single surprise menu that moves through the island's ecosystems course by course, led entirely by what the kitchen garden, orchard, and local farms have available that day.
