How the winery took shape
Stephan Asseo studied winemaking in Burgundy and spent 15 years making wine in Bordeaux at Domaine de Courteillac, where he built a reputation as something of a maverick. Frustrated by France’s AOC restrictions, he searched for a place with more freedom and eventually settled in Paso Robles in southern California.
The estate’s 25 hectares are planted to 10 Bordeaux and Rhône grape varieties, with Cabernet Sauvignon and Syrah prominent alongside Grenache, Rousanne and Mourvèdre. One named example is Optimus, a Syrah-Cabernet Sauvignon-Petit Verdot blend described as flourishing in this part of California.
