
How Wine Ages – tasting the same wines a decade apart

Cult-status Priorat with Terroir al Límit is an in-person wine masterclass and tasting in London, organized and hosted by 67 Pall Mall. Dominik Huber, founder and winemaker of Terroir al Límit, presents a selection of the estate’s wines in person.
The tasting focuses on Terroir al Límit’s Priorat approach: whole-bunch fermentation, infusion rather than extraction, and ageing in concrete or amphora rather than new oak. The estate’s work is shown through old-vine Grenache and Carignan, including Les Manyes, a Grenache grown at 800m on west-facing clay, and Arbossar, from 90-year-old Carignan on steep, north-facing llicorella slate.
The wines listed for tasting are 2023 Pedra de Guix, 2014 Pedra de Guix, 2023 Arbossar, 2018 Arbossar, 2023 Las Manyes, 2022 Dits del Terra, 2021 Les Tosses, and 2015 Les Tosses.
Huber began with a year’s internship at Mas Martinet in 2000, working first as a vineyard labourer before learning viticulture and winemaking from the ground up. There he met Eben Sadie, and the first Dits del Terra vintage came together with fruit purchased through the Pérez family of Mas Martinet, who also made space available in their cellar.
After Sadie returned to South Africa in 2012, Huber continued developing the estate, increasingly embracing organic and biodynamic viticulture and a more Burgundian conception of vineyard hierarchy. The wines are presented as a Priorat style that can combine concentration with transparency and elegance.
The tasting list includes Pedra de Guix, Arbossar, Las Manyes, Dits del Terra, and Les Tosses, with the specific vintages listed in the event materials.
