Eight-seat chef’s counter, reservations limited to 12 guests per seating. Menu differs from Maison Sun’s regular tasting menu; advance booking strongly recommended. Please communicate dietary restrictions in advance; substitutions may be limited. Tasting menu: $185 (tax & gratuity not included; wine offered separately) About On October 4th, Maison Sun welcomes Chef Bryan Chew, Executive Chef of HĒD NYC, for a one-night collaborative dinner exploring the culinary languages of Southeast Asia. Born in Malaysia and shaped by years living in Thailand, Bryan has spent over a decade cooking in kitchens including Eleven Madison Park and Noksu before bringing that experience to HĒD’s modern Thai kitchen. His cooking enters into conversation with Maison Sun’s exploration of Vietnam and Southeast Asia through seafood, herbs, fermentation, broth and fire, a menu created exclusively for this one night, served at Maison Sun’s chef’s counter around the open kitchen and vintage Molteni stove.
