CopperBay Lancaster

For this CopperBay, go through the entrance of Hotel Lancaster at 7 rue de Berri. The name is shared with the bar on rue Bouchardon, but the room, neighbourhood and booking are different. This one is in the eighth arrondissement, within an easy walk of the Champs-Elysees. The bar is a destination in its own right: the hotel takes bookings for drinks separately from tables at its Monsieur Lancaster restaurant.

The partnership brought three people from the original CopperBay into a Paris hotel: Aurelie Panhelleux, Elfi Fabritius and Julien Lopez. Drinks International reported that they worked with the hotel's managing director and Studio Jean Philippe Nuel on the space. The nautical references that run through the group's bars make sense here too, but in the Lancaster they lead into a lobby and courtyard rather than a stand-alone neighbourhood bar.

The most useful way to read the drinks list is to look at how the team groups the cocktails. One collection took Mediterranean food as its starting point, including a drink built around the flavours of tiramisu. Another, Hexagone, follows French distillers, bringing small producers into the same conversation as familiar names. These are different editions of the menu, not a promise that a particular cocktail will always be available. Ask for the current selection before choosing a favourite from an earlier visit.

The hotel directs cocktail visitors to come from five in the afternoon. In patio season, there are small plates to share; check the current menu for the selection on the day. For a music-led evening, look at the hotel's Vinyl Club dates before booking. The Thursday programme pairs a guest DJ's records with the bar service, a different proposition from dropping in for a quiet early drink.
