The vine roots run deep at Il Casale Denari, a historic monastery converted into a boutique hotel in Oltrepò Pavese. Augustinian monks started making wine on the premises in the early 17th century, and the winery still turns out excellent Barbera that’s thoughtfully paired with elevated northern Italian dishes in the old stone cellars, now home to an elegant restaurant and wine bar. Rooms are bright and character-filled, with period details — vaulted brick archways, coffered ceilings, exposed oak beams — and updated features like modern four-poster beds and granite walk-in showers. Some have views of vineyards or the lovely surrounding park and infinity pool. Others look out over the hotel’s sustainable flower farm, which is personally tended by the hotel’s owner, a floral designer. You can pick your own tulips, learn to arrange a bouquet, or just enjoy the beautiful arrangements on colorful display around the estate.
